Cheesy Chicken Enchiladas

4 TBS butter
5 TBS flour
2 (15 oz) cans chicken broth
1 1/2 tsp garlic powder
1 tsp onion powder
1 1/2 tsp cumin
1 tsp coriander
1 TBS chili powder
1/8 tsp black pepper
1/3 cup sour cream
2-3 shakes Tabasco sauce (or similar hot sauce) (I skipped)
Kosher salt to taste
4 oz cream cheese
1 (7 oz) can diced green chiles (I skipped)
3 1/2 cups (about 14 oz) cooked, shredded chicken
4 cups shredded Monterery Jack or pepper Jack cheese, divided
8-10 medium flour tortillas

1.  Preheat oven  to 350. Lightly spray a 9x13 pan with pam.

2. Melt butter in a large skillet over medium heat. When butter is melted, add flour and stir to combine.
Continue cooking, whisking continuously until mixture is light golden brown, about 2-3 minutes. Slowly add chicken broth, whisking until smooth. Whisk in garlic powder, onion powder, cumin, coriander, chili powder, and pepper.  Bring sauce to a simmer and stir until thickened, 3-4 minutes. Remove from heat and whisk in sour cream and hot sauce. Add salt to taste and set aside.

3. In a separate bowl, soften cream cheese in microwave until it is easily stirred. Add green chiles and 1/2 cup of homemade sauce. Stir to combine and add chicken and 2 cups Monterery Jack cheese.

4. Pour 1 cup sauce into the 9x13 pan. Place chicken mixture onto tortillas, roll, and place snugly in the pan. Pour all remaining sauce on top and top with shredded cheese. Cover and bake 30-35 minutes until hot and bubly throughout and cheese is melted.

Green Chili Turkey Burgers with Avocado Mayo

These are so amazing! Got this recipe from mom, we eat it without the bun. 

1 pound ground turkey
1/2 cup salsa verde
sliced pepper jack cheese
sliced tomatoes
chopped cilantro

Combine turkey and salsa verde. Form into patties. Cook over medium-high heat in a non-stick skillet. (or griddle) Serve with avocado mayo and listed fixings.

Avocado Mayo:
1 avocado pitted
1/2 cup reg or light mayo
1 clove garlic, minced
1/4 teaspoon salt

Scoop flesh from avocado and mash with a fork. Fold in mayo, garlic and salt. Press plastic wrap over mixture's surface until ready to use.
