Chicken in Honey Sauce

6 Chicken breasts
1/2 C ketchup
2 C honey
1/2 soy sauce
2 T oil
Garlic
Salt & Pepper

Put chicken in slow cooker and season with Salt & Pepper and a little Garlic. Combine honey, soy sauce, ketchup, and oil in a bowl. Pour over chicken. Cook on low 4-6 hours. Garnish with sesame seeds if desired.

Cheesy Chicken Enchiladas

4 TBS butter
5 TBS flour
2 (15 oz) cans chicken broth
1 1/2 tsp garlic powder
1 tsp onion powder
1 1/2 tsp cumin
1 tsp coriander
1 TBS chili powder
1/8 tsp black pepper
1/3 cup sour cream
2-3 shakes Tabasco sauce (or similar hot sauce) (I skipped)
Kosher salt to taste
4 oz cream cheese
1 (7 oz) can diced green chiles (I skipped)
3 1/2 cups (about 14 oz) cooked, shredded chicken
4 cups shredded Monterery Jack or pepper Jack cheese, divided
8-10 medium flour tortillas

1.  Preheat oven  to 350. Lightly spray a 9x13 pan with pam.

2. Melt butter in a large skillet over medium heat. When butter is melted, add flour and stir to combine.
Continue cooking, whisking continuously until mixture is light golden brown, about 2-3 minutes. Slowly add chicken broth, whisking until smooth. Whisk in garlic powder, onion powder, cumin, coriander, chili powder, and pepper.  Bring sauce to a simmer and stir until thickened, 3-4 minutes. Remove from heat and whisk in sour cream and hot sauce. Add salt to taste and set aside.

3. In a separate bowl, soften cream cheese in microwave until it is easily stirred. Add green chiles and 1/2 cup of homemade sauce. Stir to combine and add chicken and 2 cups Monterery Jack cheese.

4. Pour 1 cup sauce into the 9x13 pan. Place chicken mixture onto tortillas, roll, and place snugly in the pan. Pour all remaining sauce on top and top with shredded cheese. Cover and bake 30-35 minutes until hot and bubly throughout and cheese is melted.

Green Chili Turkey Burgers with Avocado Mayo

These are so amazing! Got this recipe from mom, we eat it without the bun. 

1 pound ground turkey
1/2 cup salsa verde
sliced pepper jack cheese
sliced tomatoes
chopped cilantro

Combine turkey and salsa verde. Form into patties. Cook over medium-high heat in a non-stick skillet. (or griddle) Serve with avocado mayo and listed fixings.

Avocado Mayo:
1 avocado pitted
1/2 cup reg or light mayo
1 clove garlic, minced
1/4 teaspoon salt

Scoop flesh from avocado and mash with a fork. Fold in mayo, garlic and salt. Press plastic wrap over mixture's surface until ready to use.

Mom's Ham & Potato Soup

This is my all time favorite soup from my Mom.

Boil 4 C water in a large pot then add:
4 C chopped potatoes
1 C chopped carrots
1 C chopped celery
1/2 c chopped onion
Steam 15 min.
Add:
1 tsp Salt
1/2 t Pepper
2 C diced Ham
Simmer.
In another pan mix (sauce)
1/2 C butter
1/2 C flour
4 C milk
Whisk and cook on medium heat until thick.
Add sauce to vegetables. cook 2 more minutes. Add
3 C shredded cheese

Pecan Yams

4 Cups cooked and mashed yams
1 C sugar
1/2 C butter, melted
2 eggs
1 t vanilla

Topping:
1 C brown sugar
1/3 C flour
1/3 C butter, melted
1 C chopped pecans

Combine yams, sugar, 1/2 C melted butter, eggs and vanilla. Mix well and turn into a greased 9"x13" glass dish. Combine brown sugar and flour; mix well. Stir in 1/3 cup melted butter and nuts. Crumble over top. Bake 30 to 45 min at 350 degrees or until set. You won't regret trying this. I promise.

Zucchini Bread

This is my favorite zucchini bread recipe for sure, it's from my good friend Carlee.

Preheat oven to 350
Mix the following dry ingredients in a large bowl:
2 Cups Flour
1 1/4 Cups Wheat flour
1 1/2 tsp. Salt
1 tsp. Ground nutmeg
2 tsp. Baking soda
1 tsp. Ground cinnamon
3 Cups Sugar

In separate bowl (or kitchen aid) mix
1/2 Cup Vegetable oil
4 Eggs, beaten
2/3 Cup Water
1/2 Cup Applesauce
2 Cups Grated zucchini
1 tsp. Lemon juice

Combine wet and dry ingredients. Fold in 1 Cup chopped walnuts/pecans (optional). Bake in two loaf pans for 1 hour, or until done.

Kathy's Bowtie Ceasar Pasta Salad

- MY WAY -

4-5 heads of romaine lettuce (shredded)
1 bowtie pasta pkg
3-4 chicken breasts
3/4-1 cup slivered almonds
1 pkg sliced swiss cheese (chopped into chunks)
1 cup shredded parmeson cheese
2 lemons (divided)
lemon herb seasoning (about 1 tsp)
salt and pepper
1 Cardini Ceasar dressing

 - Cook and chop chicken. Sprinkle with lemon herb seasoning, mix and chill.
 - Cook and drain pasta. Add to pasta: juice of 1 lemon, sprinkle with lemon herb seasoning, sprinkle salt and pepper, pour a little Cardini dressing, toss and refrigerate.
 -  Cut lettuce. Just before serving squeeze 1/2 of a lemon juice on lettuce. Add almonds, cheeses, season with salt and pepper and lemon seasoning.
 - Combine chicken, lettuce and pasta mixtures together. Add last 1/2 of lemon juice and toss. Add 3/4 bottle of salad dressing. Stir and continue adding dressing, lemon seasoning, salt and pepper as desired.


 - MOMS RECIPE -

2 blue box bowtie pasta
8 chicken breasts
2 cups slivered almonds
2 large shredded parmeson cheese
1 lb swiss cheese (slices)
3 lemons
Schilling lemon herb seasoning
salt and pepper
2 Cardinis Ceasar dressing

 - Cook chicken. sprinkle with lemon herb seasoning. Chill. Cook/drain pasta. Fresh lemon juice, lemon herb seasoning, parm. cheese, salt and pepper, dressing on pasta, toss and refrigerate  Just before serving squeeze lemon juice on romaine, add everything else to lettuce (almonds/cheeses) season with salt and pepper and lemon seasoning. Add more lemon juice and salad dressing and toss it.
